BIO

Starting in January 2025! 

Dr. Machado earned his Doctor of Veterinary Medicine (DVM) degree from the Federal University of Minas Gerais, Brazil, in 2012. Shortly after graduating, he pursued an M.Sc. at the same institution, where he focused on assessing the probiotic potential of microorganisms isolated from Brazilian artisan cheeses. Building on this foundation, he began his Ph.D. in 2015, delving into the characterization of the microbiomes of Brazilian artisan cheeses using high-throughput sequencing. During his doctoral studies, he spent four months in Austria at the Veterinärmedizinische Universität in Vienna, where he received advanced training in bioinformatics. Dr. Machado completed his Ph.D. in 2019 and has served as an Associate Professor of Veterinary Medicine at three private universities in Brazil, where he taught courses on food inspection and technology of dairy, meat, egg, and honey byproducts. His academic journey continued in 2022 when he began a Postdoctoral appointment at ̽̽ under the mentorship of Dr. John Barlow. His research during this time focused on antimicrobial resistance in foodborne pathogens, milk quality assessment, and the detection of the resistome in Vermont dairy farms through high-throughput sequencing techniques. In January 2025, Dr. Machado transitioned to a tenure-track position as an Assistant Professor at ̽̽. His current research continues to explore the intersection of food safety and antimicrobial resistance in dairy products, with a particular emphasis on One Health and Planetary Health approaches, ensuring a broader impact on both human and environmental health.

Awards and Achievements

Dr. Sant'Anna contributed to the development and implementation of IMA Ordinance No. 2051, dated April 7, 2021, based on findings from his doctoral research. This legislation established the official ripening periods for Minas Artisanal Cheese, ensuring consistency, quality, and safety standards across the renowned micro-regions of Araxá, Campo das Vertentes, Canastra, Cerrado, Serra do Salitre, Serro, and Triângulo Mineiro. By shaping policy, this work supported the preservation of traditional cheesemaking practices while promoting regulatory alignment and market expansion for Brazilian artisanal cheeses.
